Summer Sunset Acai Popsicles

We believe that one should never go too long without watching a sunset. Though for the days you can’t make it outside and away from your workstations, we’ve got just the treat for you. Summer Sunset Acai Popsicles; they’re like an edible vibrant Hawaiian sunset, with a boost of nutritional goodness. This recipe is dairy-free, utilizing coconut milk to combine each ingredient in a creamy way. Popsicles are not just for the kiddos, though we know they’re gonna love these too.

Summer Sunset Acai Popsicles
*Makes 6-8 popsicles

INGREDIENTS
Acai Layer
2 Tambor Acai Mix packs
1 banana
1/2 cup coconut milk

Strawberry Layer
1/2 cup frozen strawberries
1/4 frozen mango
1 tbsp coconut milk

Mango Layer
1/2 cup frozen mango
1/2 frozen banana
1 tbsp coconut milk

*For more sweetness and less tart, add a tbsp of honey into the strawberry layer blend and also into the mango layer blend.

INSTRUCTIONS
First off, you’ll need a popsicle mold. We’re using one like this and love it.

Next, blend each layer separately in your Vitamix or similar high powered blender. After blending layer 1, pour or spoon it into your molds. Utilizing the spoon (a chopstick also works well for this part) try to make sure the blend is free of air bubbles. Stick the molds in the freezer while you blend layer 2. Add this layer on top of the last and repeat process over again with layer 3. To keep all colors true, rinse the blender out after each layer blend.

Fill the molds almost to the top with about a centimeter of room for the layers to expand. Place the aluminum top onto the mold and place your wooden popsicle sticks in each, leaving about 2″ sticking out.

Freeze overnight for best results. When taking them out, run a bit of hot water over the mold area to loosen each popsicle. And then enjoy!
