Coconut Vanilla Chia Seed Pudding

Chia Seeds are a tiny in size, but they’re huge in nutritional properties. Full of antioxidants, protein, omega-3 fatty acids, and fiber, these little seeds pack a punch that promotes good health.

We’re fans of chia seeds not only for their nutritional value, but for how easy they are to incorporate into your meal. Chia seeds expand and gel-up, similar to a tapioca consistency when liquid is added to them, making them the perfect ingredient for a filling meal or drink. Today we’re sharing one of our favorite chia seed recipes, Coconut Vanilla Chia Seed Pudding. It’s not too sweet, and great for breakfast or dessert. Once the pudding is made, get creative and add it to your açaí bowl to mix things up. Enjoy!

COCONUT VANILLA CHIA SEED PUDDING
*makes 4 servings

INGREDIENTS
1/2 cup Chia Seeds
1 can Organic Coconut Milk
1/2 tsp Vanilla
1/4 tsp Salt
1-2 Tbsp Maple Syrup or 2-3 Pitted Dates

SUGGESTED TOPPINGS
Fresh fruit – strawberries, bananas, blueberries, raspberries, blackberries, mango, lilikoi. Shall we go on…
Sliced almonds, other nuts, seeds, or spoonful of nut butter
Coconut chips or coconut shreds, toasted adds a great flavor too
Gluten-free granola
Honey or Maple Syrup drizzle

DIRECTIONS
Combine chia seeds, coconut milk, vanilla, salt, and maple syrup in a bowl.
Mix all ingredients together so all the chia seeds are soaked in the coconut milk.
Cover the pudding and refrigerate to let “gel” for at least 3 hours, though we like overnight best.
When ready to eat, stir and divide the pudding among serving bowls then add your toppings!
