Acai Chia Seed Pudding Recipe
Chia Seeds are pretty amazing. Packed full of antioxidants, protein and fiber, these tiny seeds have been utilized since centuries ago, providing a sustainable fuel for the Mayan and Aztec people. “Chia” is the ancient Mayan word for “strength“. If their nutritional value doesn’t entice you, their ability to ‘gel up’ makes them an amazing base for so many delicious recipes you’re sure to get hooked on.
This recipe is the perfect ‘make-ahead’ breakfast, and we’re obsessed. We’re all about a quick go-to for a whole week of mornings on the run. It’s so good with just strawberries and on top. Layer it with bananas, berries, coconut yogurt and toasted coconut shreds to switch it up. Acai Chia Seed Pudding Recipe
INGREDIENTS
2 frozen Mix Tambor Acai packs
1 can Organic coconut milk
1 banana [ not frozen ok ]
1/2 cup chia seeds
2 tablespoons maple syrup

toasted coconut shreds
strawberries
blueberries
sliced banana
almond slices
cacao nibs
honey
maple syrup
INSTRUCTIONS
In your blender, puree the packs of acai with the coconut milk and banana. Transfer the blend to a bowl and spoon mix in the chia seeds. Cover and refrigerate overnight, or at least a few hours until the chia seeds are plump and gel-like. Stir the mixture well to make sure there are no clumps and all the chia seeds are coated. We like to mix it up again after it’s been refrigerated for a couple hours just to be sure.
Once set, spoon into your serving bowls or jars. Layer on your sliced fruits and toppings, or enjoy simply by itself. Enjoy!
