Sweet Summer Mango Acai Bowl Recipe

The Summer season means a number of things when you’re based in the Tropics. Even though the weather is relatively the same throughout the year here in Kauai; sunny beach days, weekends with friends, morning runs, and lunchtime smoothies just seem that much more fitting. One of our favorite things about Summer is the abundance of fresh ripe fruits. Mango is one of these seasonal fruits and a little like gold around here, and if you have access to a tree we envy you.

Today we’re incorporating the flavor of the season to create this Summer Mango Acai Bowl. Get picking, then get to blending. This recipe makes for a great smoothie as well, just add a little more coconut milk or coconut water to thin. Also, if you don’t have access to a tree, organic frozen mango from a local grocer is great too.

Ingredients
2 packs Traditional Açaí [ these are our unsweetened packs ]
1 cup frozen mango
1 small organic banana
1/2 cup coconut milk
2 teaspoon local honey

Instructions
Run the açaí packs under warm water to slightly soften. Open packs at end with scissors, or a sharp knife through the center half.
Add all Blend ingredients to blender [ we recommend a powerful one, like a VitaMix ]. Blend until creamy.
Add your toppings, we add more mango! Serve and enjoy!
