Gluten Free Pancakes with Acai Blueberry Syrup and Coconut Butter
*Makes 2 servings

GLUTEN FREE PANCAKES
2 apple bananas [ or 1.5 regular bananas ]
2 organic eggs
4 tablespoons garbanzo bean flour [ other gluten free flours may be used, we just like the fluffiness of this one ]
1 teaspoon vanilla extract
2 teaspoons cinnamon

ACAI BLUEBERRY SYRUP
1 100g Mix Tambor Acai pack
1/2 cup organic blueberries [ frozen ok ]
2 tablespoons maple syrup

INSTRUCTIONS
We’ve found the order in which the pancake ingredients are mixed is crucial. So first we’ll start by mashing the bananas in a mixing bowl. Next add in the eggs, vanilla, and cinnamon; mixing well. Lastly, we’ll add in the gluten free garbanzo bean flour. Be sure not to over mix, only enough to get all the ingredients combined. Over mixing once the flour is added will result in pancakes that are more dense and they’ll loose their fluffiness. Cook the batter in fist size rounds, over a medium heat pan with coconut oil. Keep a close eye as they’ll likely be ready to flip in under a minute. Cook both sides until golden brown patterns show.

For the syrup, add all ingredients in a small sauce pan, like the one above, and smash the acai down to liquify. Keep on medium to low heat for about 5 mins or until the sauce is warmed, but not boiling.

Stack your pancakes and pour on as much acai blueberry syrup as desired. Add on a drizzle of creamy coconut butter for a savory compliment to all the other flavors. Then, enjoy!
