Crunchy Holiday Pumpkin Spice Granola Recipe
With the Holidays just around the corner, we may or may not be consuming lots of Fall treats. Step aside normal ingredients because the pumpkins are in! This super yummy and Crunchy Holiday Pumpkin Spice Granola Recipe is mild in flavor and lightly sweetened with pure maple syrup. We’ve filled in the granola with all our Fall favorites like pumpkin seeds, cinnamon, and of course, pureed pumpkin.

Crunchy Holiday Pumpkin Spice Granola Recipe
INGREDIENTS
4 cups rolled oats
1/2 cup pumpkin seeds
1/2 cup chopped pecans
1/4 cup quinoa
1/4 cup flax seeds
2 tbsp sugar
1/4 tsp salt
3/4 tsp pumpin spice
1 tsp vanilla
1/4 tsp cinnamon
1/4 cup coconut oil
1/4 cup maple syrup
1/2 cup pumpkin puree
DIRECTIONS
Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl, combine the oats, nuts, seeds, quinoa, sugar and spices. Stir to blend.
Mix the coconut oil, maple syrup, vanilla and pumpkin puree in a small pot and whisk over low heat. Slowly pour over the oat mixture and stir until well combined. Spread the mixture on to a baking sheet and gently pat down to create an even layer. Bake until lightly golden, about 20-25 minutes, stirring halfway. The granola will further crisp up as it cools.
Let the granola cool off completely, before breaking it into pieces and storing away. Store the granola in an airtight container for 1-2 weeks or in a sealed freezer bag in the freezer for up to 3 months.
