5 Ingredient Raw Coconut Snowballs
Being based in Hawaii, we don’t see much snow [ besides the occasional exception of Mauna Kea on the Big Island ]. Since the weather in the Tropics doesn’t reflect much change during seasons here, we’re finding other delicious ways to get in the Holiday spirit. Today we’ve put together this simple recipe, 5 Ingredient Raw Coconut Snowballs. If you’re like us, shredded coconut and coconut chips are a slight addiction and we love adding it to the tops of our açaí bowls. These coconut snowballs are a great raw treat that are good by themselves, and even better on an açaí bowl.
These are a great treat to make in a pinch; quick and definitely a crowd pleaser. Follow the recipe below and enjoy!
INGREDIENTS
1 1/2 cup shredded coconut, unsweetened
1/4 cup pure maple syrup
2 tbsp virgin coconut oil
1 tbsp pure vanilla extract
1 cinnamon
INSTRUCTIONS
Place all ingredients [ except ½ cup of the shredded coconut ] into a food processor and blend until everything is combined. Scoop out a rounded spoonful of the mixture and form a ball with your hands. Pour the remaining 1/2 cup of coconut shreds onto a plate and roll each ball through it to fully coat the outside. For individual consumption, refrigerate or freeze the snowballs so they firm up and are easier to eat. If you’d like to try them on your açaí bowl, they’re ready to eat right away.
