Even though the acai bowl originated in Brazil and the purple superfood natively grown there, many of the acai obsessed first discovered acai here in Hawaii. In the land of vibrant tropical fruits acai fits right in, naturally complimenting the warm tones and tastes of sweet pineapple, sunrise papayas, and tart mangos. Where palm trees sway there are sure to be a few coconuts ready to harvest. For this weeks #TamborRecipe we took a trip to our local fruit stand and picked up and few for our island inspired Hawaii Coconut Acai Bowl. Few things make you feel like you’re in the tropics more than a freshly halved coconut. See the full recipe below!

*Makes two coconut acai bowls

INGREDIENTS
2-3 Tambor Acai packs, Traditional or Mix
1 Frozen Organic Banana
3/4 Cup Frozen Organic Bluberries
2oz Almond Milk, or liquid of choice

INSTRUCTIONS
Blend all of your bowl ingredients together. Spoon into a bowl and place in your freezer.

Prep all of your toppings.

Buy a fresh, husked coconut; you should be able to hear the coconut water inside. For this recipe we chose a mature coconut so the meat would be firm and thick. However, a young coconut will do and you’ll be able to eat the meat as you simultaneously scoop out bites of acai 🙂 Use a hatchet or machete to crack open your coconut. We recommend using an outdoor area where you have a little room, incase the coconut bursts open and splashes coconut water out. Find a crack in your driveway or somewhere where you can rest the round coconut where it won’t roll when set down on its side. Keeping your free hand clear of the coconut, take a swing at the center of the coconut. Turn the coconut a quarter turn and hit it again. Do this until you’ve cracked the coconut in half. Save the coconut water in your refrigerator to drink or use in a smoothie later!

Use two small ramekins to sit your coconut halves in; this will keep them upright while you fill and top. Spoon your firmed acai blend into the coconut halves, then add on all of your acai bowl toppings. Snap a few photos of course, and then enjoy!
